Slowine Cabernet Sauvignon 2016
Generous in its flavours but never overbearing, this jovial red is ideal for roasted meats and barbecues (or braais as we say). It’s also the wine to “kuier” (visit) with until the wee hours.
In producing this wine we focused on ripe fruit with ripe but soft tannin structure. A more gentle approach was followed to ensure we do not extract too much tannin during fermentation.
After fermentation the wine was racked and given wood contact for malolactic fermentation and during ageing the wine was racked every 4 to 5 months, thereafter the wine was fined to ensure there is no harsh tannin. After maturing the wine was given a coarse filtration then bottled.
The wine is a succulent basket of wild dark berries with the added allure of some dark chocolate flavours, all in a body that is supple and lingering, with a spicy edge.
Roasted and barbequed meats, or roasted root vegetables if you prefer something lighter – though we really recommend it with roasted prime rib!
