Slowine Merlot 2016
With its soft, juicy fruits and chocolate notes, this is a delicious red for daydreaming or with some very slowly roasted lamb on any lazy day, and especially Sundays.
Grapes were harvested at optimum ripeness. Two to three times per day, prior to fermentation, the shins were plunged. Once fermentation commenced the must was gently pumped over once or twice a day to keep the fermentation cake moist. After alcoholic fermentation the wine was racked and given wood contact for the malolactic fermentation.
The wine was racked every 4 to 5 months, and then fined to ensure there is no harsh tannin. After maturing the wine was given a coarse filtration and then bottled.
Soft juicy fruits with seductive touches of violets and chocolate, this is a soft and easy wine with generous flavour and a gentle, lasting finish.
Ideal with a slow baked lamb, the wine also suits wild meats like grilled springbok loin or ostrich and is the perfect companion to confit duck.
