Slowine Sauvignon Blanc 2017
Lively in flavour and a well balanced wine. Selected vineyard block before harvest to ensure a typical granny smith apple character and subtle green undertones.
The grapes were all sourced from member growers in the Overberg district and were harvested at optimum ripeness levels (22 – 24ºB). The grapes were left on the skins for a mere 3 hours to extract some more flavour. The juice was settled over two days and fermented with a selected yeast strain (CKS102). After the fermentation process the wine was stabilised and bottled.
The nose has a typical fresh aroma of granny smith apple, gooseberries and lemongrass. A well-balanced palate with its expressive varietal character and satisfying finish of green undertones.
This is a good aperitif on its own. Excellent accompaniment to scallops, tuna sashimi, Kingklip, or a variety of other seafood. Elgin free range chicken, grilled and smothered in a thyme and lemon basting with fresh basil and rocket.

Slowine is a collaborative project by producers who have their vineyards around the Groenland Mountain.
