Slowine Shiraz 2016
With its soft, juicy fruits and chocolate notes, this is a delicious red for day-dreaming or with some very slowly roasted lamb on any lazy day, and especially Sundays.
Grapes were harvested from the Overberg district at the its optimum ripeness (22 – 24ºB). The grapes were given a cold soaking for two days. Once fermentation commenced the must was gently pumped over twice or three times a day to keep the fermentation cake moist.
After alcoholic fermentation the wine was racked to tank for malolactic fermentation to commence. The wine was racked when necessary and after twelve months racked for a final and blended. After blending the wine received a coarse filtration before bottling.
This bright purple red wine show lots of spice and fruit on the nose, the palate is soft, yet concentrated with fruit and a lingering after-taste.
Serve with beef fillet or roasted lamb, potatoes and green beans. Lamb cutlets, roasted beef, oxtail “potjie” or wagyu beef.

Slowine is a collaborative project by producers who have their vineyards around the Groenland Mountain.
Contrary to the way it may sound, Slow Living does not always mean that things have to happen slowly
